It is with a heavy heart that we announce the passing of Minnie Karen Mitchell, who departed this world on February 5, 2026, at the age of 67 at Baptist Memorial Hospital on Oxford, MS. Born on January 31, 1959, in Batesville, MS, Karen lived a proud life rooted in the beauty of family, nature, and creativity, showing all of us the importance of enjoying every moment.
Karen graduated from South Panola High School and spent her professional life as a Program Tech in the farming industry, where her dedication and hard work were deeply appreciated. However, those who knew her best will remember Karen not just for her work, but for her vibrant spirit. When she wasn't busy raising her family, she passionately engaged in working with stained glass, bringing beautiful art into her life and the lives of those around her. Her love for flowers and her affinity for watching "Days of Our Lives" were also cherished parts of her daily routine. Her love for animals filled her home with warmth, and her caring nature touched the hearts of many.
Karen was a devoted mother to her son, Josh Thweatt (Lesley) of Oxford, and her daughter, Constance Griffin (Jeff) of Water Valley. She also leaves behind her sisters, Eva Dillard (Dick) of Chattanooga, TN, Kathryn Clark (Mike) of Rome, GA, Deborah Bratton (Eddie) of Pensacola, FL; four grandchildren, Bryson Thweatt, Aiden Thweatt, and Ava Thweatt, all of Oxford, MS, and Wylie Griffin of Water Valley; a host of nieces and nephews; as well as her dogs, Snuggles, Skeeter Brown and Bella.
In honor of Karen's life, a funeral service will be held on February 9, 2026, at 11:00 AM at Seven Oaks Funeral Home, with visitation starting at 10:00 AM. Friends, family, and anyone whose life she brightened are asked to come together to share stories, celebrate her legacy, and reflect on the joyous memories that will forever reside in our hearts.
Karen will be laid to rest in a burial ceremony on February 9, 2026. She will find her final resting place on Blackmur Dr. in Water Valley, MS, where her spirit can forever nurture the flowers and beauty she adored.
Let us celebrate Karen's life, a life full of love, laughter, and artistry that will continue to inspire us all.
